This extreme heat is also the reason that the pizzas cook relatively quickly, often only cooking for a few minutes! In traditional baking, the taste is milder. Because the oven doesn’t use real firewood, even the pizza will have smokiness in it. Texture and Crust

The base is still pliable and soft, which is why you can fold it up.

It is rare to get char marks at all. The base is stronger and less airy, so the overall bite is balanced but not smoky from the wood.

In a woodfire oven, pizzas cook extremely quickly, and the high heat of the oven reduces cooking time to as little as 90 seconds. This is great for busy restaurants trying to keep food fresh while providing quality, though working to bring the oven up to temperature requires a good deal of time and skill.
Traditional ovens will take much longer to cook a pizza. Many home cooks select this option because it is easy to work with. The results can be consistent, but cooking time does alter the texture and flavour because of the longer cooking times. It works well for a home cook, but it does not give the consumer the experience of what wood-fired pizza would be like, as some people may have anticipated.
