Introduction

There is a special kind of satisfaction in a slow-cooked dish. The meat is so tender it gives way at the touch of a fork, the sauce is deep and glossy and the whole plate feels like a warm hug. On cooler evenings in Newcastle, these are the dishes people crave.

At In Forno Hamilton, three menu favourites lead the slow-cooked comfort category: the Lamb Shank, the Beef Cheek and the Pappardella Lamb. Here is what makes each one special.

Why Slow Cooking Matters

Some cuts of meat, such as lamb shanks and beef cheeks, are tough when cooked quickly. They are full of connective tissue, which breaks down during long, gentle cooking and turns into rich, silky gelatine. That is what gives braised dishes their melting texture and deep flavour.

Braising is also a classic Italian technique. Meat is browned, then cooked slowly in liquid with aromatics until tender. It takes time, but the reward is a dish that tastes far greater than the sum of its ingredients.

The Lamb Shank

Our Lamb Shank is slow-cooked until tender and served with creamy garlic mashed potato, buttered greens and a rich lamb sauce. It is one of the largest, most generous plates on our menu.

What to expect:

It is also marked as gluten free on our menu, and it is cooked with wine.

The Beef Cheek

Beef cheek is a hidden treasure for meat lovers. It is a hard-working muscle that becomes incredibly tender and flavourful when braised. Our Beef Cheek is served with creamy garlic mashed potato, buttered greens and a rich beef jus.

Compared to the lamb shank, the beef cheek is richer and more deeply savoury, with a spoon-tender texture that many guests describe as almost buttery. If you like pot roast, short rib or braised beef, this is the dish for you. It is also marked gluten free.

Pappardella Lamb

If you prefer pasta, our Pappardella Lamb brings the same slow-cooked flavour in a different form. Wide, ribbon-like pappardelle pasta is layered with fragrant garlic, slow-braised lamb ragù, fresh parsley and a generous shaving of parmesan.

Pappardelle is the traditional partner for hearty meat sauces because its broad surface holds onto the ragù. Every forkful carries tender lamb, a savoury sauce and silky pasta. It is a lighter way to enjoy lamb than the shank, but with the same comforting depth.

Which One Should You Choose?

If you want even more lamb, the lamb pizza with slow-cooked lamb, caramelised onion and salted tzatziki is another menu highlight.

Wine and Starters

Slow-cooked meats pair beautifully with Italian reds. Ask your server about our selection of Italian and local wines to find a bottle that suits your main. For a starter, share Crispy Pork Belly, Burrata or a Caprese Salad to begin the meal on a lighter note.
