Introduction
The classic Margherita will always have a place on the table, but some of the most exciting pizzas right now play with contrast: heat against sweetness, salt against fruit, crunch against cream. At In Forno, two of our wood-fired pizzas lead that trend: the ‘Nduja & Peach and the Hot Honey Salami.
If you are a pizza lover who likes to try something new, this guide explains what is on each pizza, why the flavours work and how to build a shared pizza night in Newcastle.
Why Sweet and Spicy Works
Sweet and spicy is one of the most reliable flavour pairings in food. Heat wakes up the palate, while sweetness softens it and keeps you reaching for another slice. Add salty cured meat and creamy cheese, and you have a pizza that hits every note.
Italian cooking has long used this idea. Think of fig with prosciutto, or spicy salami with soft cheese. Our two pizzas take that classic thinking and give it a modern twist, finished in a hot wood-fired oven that adds smoky, blistered char to the base.
The ‘Nduja & Peach Pizza
‘Nduja is a spicy, spreadable pork salume from Calabria in southern Italy. It is made with chilli peppers, which give it a fiery red colour and a rich, slow-building heat. When it warms in the oven it melts into the pizza, flavouring everything around it.
Our ‘Nduja & Peach starts with a tomato base and mozzarella, then adds creamy, spicy ‘nduja paste. It is topped with sweet peach slices, fresh rocket, roasted macadamia nuts and a balsamic drizzle. The result is bold and layered:
- ‘Nduja brings smoky heat and savoury richness.
- Peach adds juicy sweetness that cools the spice.
- Rocket gives a fresh, peppery bite.
- Macadamia adds crunch and a buttery nuttiness.
- Balsamic ties it together with gentle acidity.
Please note this pizza contains nuts.
The Hot Honey Salami Pizza
Hot honey, honey infused with chilli, has become one of the most popular pizza toppings around the world, and for good reason. It gives glossy sweetness with a slow, warm heat.
Our Hot Honey Salami combines tomato pulp, fior di latte, mild salami, whipped ricotta cream and fresh basil, finished with a drizzle of hot honey. The whipped ricotta is the secret: it is cool, light and creamy, which balances the heat and makes every slice feel indulgent without being heavy.
If you like salami pizzas but want something more interesting than a standard pepperoni, this is the one to try.
The Dough Makes the Difference
Great toppings need a great base. Our pizza dough is fermented for up to 72 hours, which develops flavour and creates a light, airy crust with a satisfying chew. The long fermentation also helps the dough bake into a base that is crisp on the outside and soft within.
That is why our wood-fired pizzas hold up well under generous toppings like ‘nduja, peach and hot honey. The crust is strong enough to carry the flavour and light enough that you still want to finish the last slice.
Building a Shared Pizza Night
Pizza is made for sharing. Here is an easy way to plan a table order:
- Start: Woodfired Sticks with garlic and herbs, or Fried Mozzarella with hot honey and parmesan.
- Pizza one: ‘Nduja & Peach for something adventurous.
- Pizza two: Hot Honey Salami for sweet heat.
- Pizza three: a classic Margherita or Prosciutto Parma for balance.
- Finish: a shared Tiramisu or Affogato.
If anyone at the table prefers milder flavours, the Capricciosa, Pollo and Margherita are reliable crowd-pleasers.
Drinks to Pair
Sweet and spicy pizzas pair well with crisp, refreshing drinks. A chilled white wine, a sparkling option or a light Italian red can all work, and a cocktail from our bar is a fun match for a festive night out. Ask your server for suggestions based on your pizza choices.
